First things first, let's talk about how simple this recipe is. You literally just need four ingredients, a pressure cooker, and voila - juicy, tender, melt-in-your-mouth pulled pork in no time. As someone who's constantly on the go, this recipe has been a lifesaver for me.
How to serve pressure cooker pulled pork
Pulled pork is incredibly versatile. If you make a big batch and can manage to keep your hungry family from gobbling it all up in one go, you can use it throughout the week in many different ways or freeze smaller portions for later. Serve it on a bun with coleslaw for a classic BBQ sandwich, toss it into a salad for a protein-packed lunch, or even use it as a topping for nachos. We like to combine ours with kimchi for tacos or sandwiches with a bit of Korean flair. The possibilities are endless.
Easy on the planet and your wallet
While some may advocate for a vegan lifestyle as the most effective way to reduce environmental impact, it can be a tough sell for those of us who enjoy our meat. In my meat-loving family, we compromise by cutting back on beef and cow's milk products. Did you know, pork production emits less than a third of the emissions produced by beef? By savoring this mouthwatering pulled pork, you can actually pat yourself on the back for being eco-conscious too! And if you're looking to save some money, you'll be happy to know that pound for pound, pasture-raised heritage pork shoulder is about half the cost of its grass-fed local beef equivalent.
So, what are you waiting for? Give this pressure cooker pulled pork recipe a try and let me know what you think. It's easy, delicious, and budget-friendly, what more could you ask for? Happy cooking!
Easiest Pressure Cooker Pulled Pork Recipe
Ingredients
- 1 to 2 tablespoons cooking oil
- 2-4 pounds boneless pork shoulder (cut into two pieces and brown in batches if needed)
- 1 cups barbecue sauce
- 1/2 cup water or broth
Directions
- Brown the pork. Select Sauté to preheat the pressure cooking pot. When the indicator says HOT, add the oil to the cooking pot. Brown pork on both sides, about 3-4 minutes per side. Remove to a platter.
- Deglaze. Turn off the heat, add 1/2 cup water or broth and scrape up browned bits with wooden spoon. Feel like kicking it up a notch? Add a splash of bourbon or whiskey here or try deglazing with Coca-cola or Dr. Pepper.
- Add BBQ sauce. Return pork and any juices to pot and add BBQ sauce. If you've got some dietary restrictions or kids who can't handle bold flavors yet, you could opt for just salt and milder seasonings (e.g. garlic powder, onion powder, brown sugar, cinnamon).
- Pressure cook pork. Lock lid and set vent to closed. Select High Pressure and cook for 45-60 minutes – depending on the size – allow full natural release when cooking cycle is completed (approximately 15-20 min).
- Shred pork. Remove the meat from the pressure cooker and shred with two forks, add back some of the cooking liquid if you'd like.
- Serve and enjoy!
