One thing I love about this 30 minute meal is you can easily modify it based on whatever seasonings you have in your pantry. Plus, you can swap potatoes out for roasted green veggies. Broccoli, green beans, brussel sprouts, and asparagus are a few that can take the heat.

Tweaks for Tiny Eaters

Have little ones who are still getting used to big flavors? Chicken nuggets and french fries are typical "safe foods" for many kids for a reason! They know exactly what they're getting and there are no surprises. This meal can help anxious eaters expand their repertoire as it's something familiar–chicken and potatoes–but with a different look and feel. Here are some modifications to make this meal even more kid-friendly:

  • Keep the chicken seasoning simple with just salt and milder seasonings. My little eaters can't handle black pepper yet, but maybe someday! If you don't want to suffer eating bland food just for the sake of your kids' hypersensitive taste buds, hold the spices on just one serving.
  • Use roasted potatoes as a base to help your kids explore new flavors. Let them smell a few different spices and choose one to try. Thyme, oregano, lavender, paprika, garlic powder, and onion powder have all passed the test in our home.
  • When roasting the potatoes, make sure they're cut-side up to avoid burning and encourage them to puff up nicely.

Ingredients

  • 4 chicken thighs, bone in & skin on
  • A pint of cherry tomatoes (~12 oz)
  • Creamer potatoes
  • Oil
  • Balsamic vinegar
  • Your favorite dry rub seasonings

    Suggested rub:
  • 1/2 tsp kosher salt
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp onion powder

Directions

  1. Preheat your oven to 400 degrees F.
  2. Season your chicken thighs with your favorite dry rub seasonings.
  3. Cut your creamer potatoes in half and toss them with oil and seasoning.
  4. Roast your potatoes in the oven for 30 minutes.
  5. Preheat your air fryer to 380 degrees F.
  6. Place your chicken skin-side down and air fry for 12 minutes.
  7. Toss your cherry tomatoes with oil and a drizzle of balsamic vinegar.
  8. Turn your chicken thighs over, add your cherry tomatoes, and air fry for 10 more minutes.
  9. Plate your chicken, potatoes, and tomatoes, and enjoy!
